Easy High Protein Kale Salad - 3 Ingredients

This is my go-to salad when I am out of energy at the end of the day or midday and also lacking some protein to reach my daily goals. It is high in fiber and protein, low in fat and is perfected with a sweet raspberry dressing!


Ingredients:


For the salad:

-Kale (I get it prechopped and pre-washed for convenience)

-Fat free PRESSED cottage cheese

-Seeds and cranberry salad topper

-Salt


For the dressing:

-1/3 cup seedless raspberry jam (if you have it with seeds, or you have strawberry jam, that would also work)

-1/4 cup olive oil

-1/4 tsp salt

-1/2 cup red wine vinegar (or sub with 1/4 cup water)


Instructions:

-Chop and wash the kale if needed

-Rub the kale with some salt until its color darkens and it withers

-Crumble the cottage cheese and add as much as you like (free proteins!)

-Top with 3 tbsp salad topper

-Add 3-4 tbsp of the dressing or more according to your taste


You can also substitute the kale for baby spinach or mixed spring greens.
